Rat cheese, soda crackers and a RC cola, eaten in the back of the store sitting on a sack of cow feed.
depends on what i am putting or using the cheese for.
personally i don't like to eat cheese by itself.
but i really like swiss cheese on most things.

Mimolette for me.
It's kind of a French Gouda but dark orange and a little tangy.
It comes in a ball about the size of a small cantelope. Looks like one too.
The rind gets its look from cheese mites during aging.
I highly recommend trying it if you can find it at a cheese mongers.
I like Swiss on pretty much anything. Grilled cheese, cheese and crackers, in a sandwich, etc.
But like Axxe said, it depends on what I'm using it for. Different cheese for different uses. Fresh grated parmesan on a salad or pasta, a variety of italian cheese on pizza, etc.

Asiago, Manchego, Sharp Provolone, Parmisano Reggiano, Grana Padano, Locatelli Romano Pecorino, Pepper Jack, Queso Fresco, Roquefort, Fontina, Gruyere, Havarti with Dill, so many great cheeses, so little time!
Horseradish Cheddar is my favorite at the moment.
Just had that on my smoked chicken salad sandwich for lunch.

It's a blend of fontina and Santiago, soaked in vodka and flavored with either herbs, currants, peppers, and a couple of other flavors. It's great.

I like a lot of different cheeses Cheddar med. and sharp, Pepperjack,American,Swiss,Mozzarella,and i'm not sure what the white and yellow cheese that my wife buys? It must be a cheddar and maybe swiss?? not sure,but it's really good as well.
Havarti is really smooth and creamy, use it with some cheddar for an awesome grilled cheese.
