Tuna are in....In the Pacific Northwest!

    Thought I'd post this up......It's time for me to start canning Albacore Tuna.

    This guy is from Newport, Oregon and has his own boat. He caught this 43 lb Albacore.

    I went down to the docks and bought a 20 lb fish off the boat, The Valkyrie.

    My step son is heading out on a boat out of Coos Bay for a month to do some tuna fishing.

    He should have good luck, water temperatures are in the 60's so Tuna are close. No three days at sea to get out to where the fish are!

    We've got fish like that, but they have whiskers. You could try making sushi out of them, but you would have to be really hungry to eat it. :D

    Nice looking fish. I really would love to hook one of those!!!

    Right you are!! Pressure canned at 11 pounds or better for 100 minutes or longer. The pics just show the jas preped and ready for the pressure canner.

    I can get the price for a 5 oz can of White Albacore Tuna down to $.83/can doing this. Some day when I'm a little better healed, I'll think about smoking. The goal here was to preserve the fish for long term use.

    I guess i could smoke it, then can it!! :D

    But, I wounder how long it would take to get the Tuna smell out of the smoker??? :D

    Ya..... If you decide to put up some smoked, all kinds of creatures show up for the feast......You shouldn't have a tuna smell unless the fish was on the boat for a long time and not iced down for a while......

    Funny. I have not smoked tuna, but we do smoke a lot of salmon.

    MMMM. Nice thick tuna steak, lightly seared. I'm hungry now.

    My BIL worked a long line tuna boat out of Destin, Florida...Until the BP spill shut down the Gulf.

    Blade Runner.......

    My neighbor did some work on a long liner yesterday, [ electronics ] He gave me about five pounds of sword fish. He said that he didn't have room in his freezer, he had like a 200 lbs, fish......I'll be putting that on the grill along with steaks, and deer sausage. I also have some gator that my brother in law gave me........:)

    Naaa....One thing about a cajun he knows a good thang when it comes his way and will eat just about anything, now if I could just get past that grin on that opposums face I might give that a try. :eek: :)

    $3.00/ pound for the whole fish, so a 20# fish yields about 8# of meat and costs $60!.
