Tasso is a creole style of cured pork shoulder ( which means it is not ham, which is made from the butt). Tasso typically is dry cured for a few hours, never more than a day, and then rinsed, coated with ground chillies and garlic. It is then hot smoked, typically with hickory.

Tasso is added to many creole foods as a flavoring, from beans to gumbo.

That sounds pretty good. Just needs a better name. Maybe creole pork?
