Ok, regional foods!

    The very best food that I've ever eaten is in SW Louisiana in the "cajun" country.

    Hotter than hell, but so tasty it puts "Haute Cuisine" to shame.

    Y'all aint lived til yall done ate oyster po-boys, crawfish bisque, seafood gumbo, boudin, chicken or fish a la sauce picante, shrimp etouffe, catfish courtbullion etc.

    Seeing some dubious items there. What's that in the upper right with the hole in the middle? How about the small brown things in the lower right?

    A traditional green chile is pretty great.

    Out west, once went to a small restaurant run by an older couple, and they used their tried-and-true family recipes that had been handed down for generations. Probably the best spicy chicken mole I've ever had. Just a decently-cooked chicken breast, but with the most amazing mole sauce I'd ever had. They made a fabulous chili rellenos as well. Simple, great cooking, with recipes generations old. Yum with a capital "Y."
