Hot peppers.

    My wife had a bumper crop of hot pepper this year, ciranos, jalopeno, chili, etc.

    I was thinking of try to put some in the smoker and see how they come out.

    Anybody do this, any suggestions, I have a bunch of maple and apple wood
    for smoking.

    I don't know how it will work out but there are a lot of smoked chilies available in the super markets down here.

    My wife was roasting some Serranos in the kitchen the other night and left the stove for a minute. I have do tell you that a burned hot pepper makes something like tear gas when done in the house like that. :eek: It was a couple of days before it cleared out.

    I usually do them on the barbecue with apple wood (that is always my go-to wood for smoking). I have a Traeger smoker and it works magic on anything you want to cook.

    I had a great pepper crop this season also , I ended up with a couple gallons for habaneros, and about 3 gal of seranos, I gave away all but a gal bag of each which are in the deep freeze

    Well today was the day. Damn, sometimes you just get lucky.

    Cut up the peppers this morning. I cut the tops and tails off and sliced
    them length-wise once. A mix of Habernaros, Seranos, and "Chilis".
    No jalepenos this year; they all rotted on the plant?

    9 hours later in the smoker with apple wood and damn they are good.

    I took 3 of them ground them up real fine and mixed it into a pint of
    SWMBO's mild salsa. Damn son! I do okay sometimes, nice flavor,
    definitely on the hot side and a smooth smokey finish. Will have to do
    this more next year with the peppers.

    Tonight is meat loaf, I made a mini chipotle loaf for me. I will report
    in later.

    we took a mix of peppers, dried them in the dehydrator and ground them to a course pepper, vacuum sealed in bags :)

    The meatloaf was awesome...

    2 lbs ground beef
    1-1/2 cups breadcrums (eye balled it)
    1 egg
    1/2 Large (strong) onion
    4 cloves Garlic
    about 1-2 tbsp of each of the following (I do not measure much)
    Worchestershire sauce
    Soy sauce
    Red wine
    Salt and pepper to taste
    Mix and bake in a 350F oven for 1.25 hours

    On the side I took a healthly 1/2 lb of the mixture and added 3 of my
    (sliced in half chipotle peppers, well ground) and mixed it in and made
    a mini meatloaf for the fat old man, it was excellent!!!
