I'm looking to get either a glock 26 or a Walter pps to carry every day. Basically I'm wondering how hard it is to conceal the thickness of the glock or is it worth it to cut down on magazine capacity and go with the thinner Walter?

I carried my Walther PPK/S for years.

My advice is to go with the Walther.
I don't much care for the Glock 26 and 27 because the grip just feels too short.
Sure, you can get grip extensions, but why do that when you can get a 19 or 23 with a longer grip?
For conceal carry, I think the walther would be easier to hide because it is thinner.
