Eat lamb on International Australia Day

    Down here any sheep-related meat is known as lamb...

    Lamb is god if it is cooked right. If it isn't cooked right NASTY....


    Can I eat beef with some mint jelly and call it Lamb?

    Up here that's called mutton, mate!

    Anyhoo, the wife just picked up some Costco lamb chops yesterday and I'll be grilling them tonight.

    I agree, roasted lamb is awful but it is damned good broiled.

    I never ate Lambchops til my Dad would cook it for my Jewish BIL on our weekend family dinners - Rick would eat lamb but not pork or beef - more a health thing than religious though - he's what I refer to as "disgustingly healthy", and actually LIKES yardwork...... :D
    The lambchops reminded me more of porkchops though.......

    Now goat - THAT stuff is horrid........ ;)

    You take that back right now! If the lamb you're roasting is awful then you must be doing something wrong... There are very few things I'd rather eat than roasted lamb shanks, especially on top of creamy garlic mashed potato.

    I reckon you must be doing something wrong then there Lon, they're almost the same cut of meat!! I score the leg lengthways and across with a Stanley knife, stuff each intersecting cut with fresh rosemary and garlic, then sit the leg up on a roasting rack and set it in a tray. Then I cover the tray in aluminum foil and cook it on 350 for 2.5 hours..

    Beautiful!! :D

    Oh the fat that drips out makes the BEST gravy too :p

    I braise the shanks, which makes a big difference, at least to me. To a mirepoix I add a braising liquid like stock and wine. Takes some of the strong lamby taste out of it.

    The leg is roasted....yuk.
