I have a SW1911 on the way and was told the thumb safety is made out of aluminum. If this is correct, what brand of steel safety can I replace it with without fitting, or very little at best? This is the all steel, full size "billboard" 1911.

I really doubt its made of aluminum. MIM maybe, but not aluminum.
If I were to replace a 1911 thumb safety it would be a EGW HD Thumb Safety: Evolution Gun Works Inc.
I had never heard of one in aluminum but, that's what I was told. I'll check it out when I get it. The EGW isn't cheap but may be worth it. Thanks for the link.
