What is your intended use for it? That drives a number of choices.
How much are you willing to spend?
For general range use: SA Range officer or one of the standard size (5" barrel) Loaded models that strikes your fancy. I have have a SA Trophy match that is brilliant, if you budget reaches that high, it's worth a look.
Concealment, as you've seen, there are a number of opinions on what's best. My CC 1911 is a DW CCO. Officer sized frame (Compact) w/ a commander sized barrel. I don't believe that SA makes any Officer frame based 1911s (The EMP is a different breed of cat as far as I know.) Colt and others do, however. Worth noting, the SA Armory Champions are 4" rather than the more traditional 4.25". A friend of mine found this out after he bought it. It is a source of irritation to him, he likes swapping & tinkering with things and the non-standard size bugs him. I'm sure 98% of buyers don't really care.
