Congratulations on your first 1911!! Exciting indeed.
In a very friendly way, please let me STRONGLY encourage you to consider making your first "mod" simply a lot of ammo and practice, with a ton of dry firing. Really get to know your pistol before you do anything to it.
After that...the best thing would be to get the trigger worked on to smooth it out and get the weight down. If you are intending to use this for self-defense or anything other than a fun range gun, do NOT get the trigger weight below 3 pounds, in fact, I'm not sure you should go that low.
I think a Rock Island is a good basic 1911, so you have the classic one piece guide rod, and the standard flat mainspring housing. I can't really think of anything to "mod" beyond that.
The good news about a less expensive 1911 is that you should not sweat making it into some kind of "custom" 1911, just shoot it a lot and enjoy it.
Put the money you would spend on customizing it into ammo.
Hogue grips are awesome though, if you get a hankering for a better grip set up.
