does anyone know why when you train to use a rifle the instructor wants you to go through all your checks with your weak hande..

So that you eventually don't have a "weak" hand anymore..,,,,,, or that's my guess anyways.

So your strong hand maintains control of the weapon. And u could shoot if the need arises.

Training
 
I believe most trainers want you to be able to load, unload, and shoot with both hands and most trainers like to teach people to be able to shoot a rifle with either hand. What if something happened to your dominant hand and you had to use the other one? Would you be prepared to do that especially in an emergency situation. I think it is good to learn how to be proficient with both hands and being able to shoot a rifle or pistol left handed and right handed.
