polyurethane?
 
If I paint my gun would it be wise to cover it in several coats of polyurethane to decrease paint chippage or is there some better type of coating I could use?

Duracoat paints are made just for guns, and wont chip or react to the heat of the gun
they also come in just about every color and pattern you can think of

First off what are you painting? Are you painting the stock only or the stock and barreld action? or the whole thing scope and all?

I am not one for painting guns. Painting a stock is different. I would just paint the stock and then clear coat it. Making sure to mask the barrel channel and action inlet.
