Canning is going to be one of my next ventures.

I am working in Mesa, AZ and I just found out that the LDS/Mormon's have a cannery near where I am working. I am going to head over there in the next couple of weeks and see what they have in the way of information. One of the architects on my project is a Mormon and said that you don't have to be Mormon to buy stuff or get information. This may be a good resource to check out in your area.

I'm going on vacation and the wife will be home alone for a week. I filled the generator and two 5 gallon cans of gas for her and added stabile for ethenol fuel. I also ran two long leads off the generator into the house for her to run what she needs. She is loaded up with 6, 40 pound bags of pellets for heat from the pellet stove as well as extra propane for the gas grill. I bought her 6, 36 bottle cases of water and she has plenty of food to last. Why you ask? Because if something happens while i am away I will feel much better knowing she has what she needs. I am also leaving her with my Taurus TCP380. Alot of wierd sh!t going on latley.

Thanks. It wouldn't be right to leave her and the kids without protection and options.

I'm going on vacation too. Headed to AZ as soon as I get home from work. Hoping to get past OKC before it gets too late and stop for the night. I'm taking the family with me, though.
You're right about weird stuff going on. The geologist that is predicting an earthquake while I'm gone isn't giving me warm fuzzies.

Me, too. A buddy found out about it on providentliving.com, I think he said. The prices end up being pretty good! But this is literal canning -- in #10 cans -- not learning the home canning process, and using glass jars with seals. We'll be doing that in early April.

Also, picked up some fresh okra and will pickle that.

Spicy pickled okra. Just 5 pints showing in the photo, but had enough to can 7 pints. First time trying this pickling recipe...it is from Cajun Chef Emerill Lagasse. Recipe called for "hot peppers" mixed into the pickling mixture. I mostly used red chile pepper, but mixed in a small amount of orange habaneros.
The okra needs to pickle in the jar for at least one month before eating.

Swampbilly
