Default Boston baked beans...................

Well I pulled out the old cooking bible, low and behold theres a whole section on the subject. Theres this thing writ up, Says Boston Baked Beans, cooking beans, from Moore's " Rural New Yorker ". And yes this ain't no Kosher style beans..............This is a book given to my father by his sister, It's called America Cooks. That was back in the 50's................They call for Jamaican mollassas, not that stuff from N.O..................

I like using Sorghum. But I also have a bottle of Blackstrap Molasses. That's the "real thing".

An old gentleman used to live a few miles down the road from where I grew up and he made real molasses. He grew and cut his own sugar cane. Then he would put it on a press. He would hitch a mule up to a small cut tree that was attached to the press and the mule would just walk in circles running the press. There's no telling how old that press was, and there was no doubt based on the worn circular path around it that it had been in that spot for a really long time. He would then boil down the syrup from the press and make the best molasses ever. I really miss that stuff, and people like that gentleman that would give us a glimpse of how things use to be done.

I've never had beans that didn't come out of a can. I like the little cans for lunch in the tree stand.

Blackstrap molasses can be hard to find. I can always find "full flavor" but not always blackstrap. If you're having trouble finding blackstrap, Duddie, I can send you a bottle of it.

real beans don't come out of a can!

they are slow cooked on the stove with bacon, salt pork or a hambone.
