Ive never tried a water quench I always just use hydraulic oil and transmission fluid mixed and heated to about 100 deg.

I found after an oil quench, plunging it into a cryo soak using dry ice covered with rubbing alcohol sets up the hardness for a "Chopping" knife very well as a secondary hardening. Be sure you completely clean the blade before plunging of all oils. Just some old school ways. Keep up the fine work fellas.
