Well my newest knife is a CRKT special forces Tanto M-16 and it has 8cr14mov steel. I like that steel a lot. It's not as high quality as s30v but it has its qualities that make me like it.

Carbon steel, only problem is that it can be hard to sharpen

I don't see why. Carbon steel is a lot easier to sharpen than stainless and gets much sharper. It just doesn't hold an edge as well.

I can never seem to get a good edge on my Ka-Bar USMC, and that's carbon steel, it might just be my knife or my sharpener

I have more trouble with my spyderco persistence with the 8cr13mov steel keeping it sharp. But when talking steel there is always a trade off somewhere. Either giving up some toughness for hardness or the other way around or giving up corrosion resistance. I like high carbon steel a lot that being said. On the other hand I like most steels and only hate on the lowest grades. For instance anything lower than AUS-6
