Considering all different types of shotguns for all around/ waterfowl hunting. what do you guys think about using a side by side for waterfowl hunting?

Side by sides are alright for hunting but I prefer an over and under for waterfowl because O/Us swing better in my opinion. I think for passing shots O/Us are the way to go.

I have used SxSs from 20 gauges thru 10 gauges for decades with no problems. I do not like O/Us at all. Nothing wrong with either gun type, just personal preference. An O/U does have to break open quite a bit more to clear the bottom barrel, and that can be a pain in a tight blind.
I have gone back to repeaters because I don't shoot anything as much as I used to, and switching gun types doesn't help your shooting average in any event.
Depending on your personal fire control practices, you may find you miss the third shot at times. But, if you want to shoot a SxS go ahead and enjoy. Old Nash did okay with one.

My dove gun is a 16ga SxS Stoeger Uplander from the late 60's. It points like a dream and is light enough to carry all day, it's all I use for dove anymore. I don't duck hunt but I wouldn't hesitate to use my SxS.

One point on SxSs for waterfowling- there are some older NICE 2 hole shootsguns (that Cajun for double) that are not rated for STEEL shot- and waterfowling limits you to that.

Actually, there are a lot of alternatives to steel now, and you can get a SxS fitted with choke tubes, and the right extended tubes are even fine with steel or hard tungsten. I shot a Stevens 411 for a while, and while it was not a Winchester 21 by any stretch, it was a good solid gun and worked very well with extended tubes.
