the Remington M870 or the Mossberg M500 are probably going to be the best choices new, in your price range. both are proven performers and taken care of, will last for many hunting seasons.

Used: I'd say an 870 Wingmaster from about 5-10 years back. They're better quality than those of today.
+1 except for a decent 870 I'd go back at LEAST 10 years and more like 20. Here's an option for sport and small-medium game plus defense.

There is another combination with a scoped rifled slug barrel for medium-big game plus defense.

He'll love it, and you.

I'm another in favor of Mossberg. Their barrels are interchangable, and you can get one for hunting and one for fun and HD. I will be picking up mine this week and cannot wait.

If you have to keep it under $300 I wouldn't turn my nose up at a Stevens. A stevens shoots just as well and lasts just as long. Just no aftermarket stocks and other accessories. Mod

As others have mentioned a gift certificate isn't a bad idea.

I'm a huge 870 fan but I have an older one and they are a lot better than the new ones. If you have to have new then I'd agree with a lot of the guys here the Mossberg 500 is the way to go and, you can replace the cheesy saftey for fairly cheap.
