Stag arms are all mil spec buffer tubes right?

No, all of their commercial rifles have commercial tubes. The mil-spec tube is an upgrade available for their rifles.

Hard to get a better AR, IMO.

So how can I tell what tube I have? It's the left handed AR with diamond head fore grip and sights from the factory, this is my wife's rifle and I want to get her a better stock for it

Take the stock off. If the buffer tube is slanted at the end, it's commercial.
