With a rear BUIS under a scope, does someone pretty much have to have a quick-release scope mount? How would someone remove a scope in the field without quick release?

If your primary is over you buis it would need to be removed. I'd use a multi tool.

it kinda pointless to have a buis that is being cover by the scope. If I was to have a back up it need to work without me taking the time of assemble/disassemble something for it to work lol.

Run a quick release mount on the scope and you'll be able to go from optic to BUIS in a fast manner.

My scope is quick release and the my buis is quick release as well I have already sighted the open sights and I know exactly where it goes on my rail if I need to put it back on. I also have a small red dot on top of the scope which is sighted to about fifty yards.
