Of the choices I would recommend .308 or 30-06 for no other reason than the ammunition is available everywhere in a vast array of bullet weights and designs and it is relatively inexpensive.

As to the rifle, you should reconsider buying a new Remington 700. Remington's QC as dropped since the Freedom Group bought them. Alternative brands in the same price range to consider are Savage, TC, Weatherby and Tikka. If you have your heart set on a Remington, find a good used one from before FG started mucking up the works.

.284/ .284 improved or 7mm RSAUM shooting Berger 180gr. Hybrids or similar.

To get better ballistics from a .30 caliber, you need to be shooting a 215 gr. hybrid, 220 gr SMK, etc. Then, you'll still need a case with enough capacity to drive the bullet fast enough to beat the 7's.

Unbiased Barnard, BAT, Kelbly, Nesika Bay x2, Remington x3, Browning, Marsh, Ruger x2, Savage x3, UltraLight Arms, AR15 x3 owner. I like 'em all.
