Browning BLR Lightweight `81 would be my choice.

Or, BLR Lightweight ‘81 Stainless Takedown

I would deffinately go with a Marlin, can't go wrong with it, caliber would depend on what you're hunting

Buy a Marlin 1895 45-70. Stainless is the best option if you can afford it.

I want a defense weapon, I want the option to stand my ground if needed-
So why the 45-70, why not the 308 or 338 ?

A bigger hole = more things coming out of that hole.

Think about it dose more water come out of a garden hose or a firehose?

.45-70 would probably be the best defensive lever gun you can find. Big bullet will take anything down or---along with it.
