Anyway, to get back to my original reply. Even if the .308 won't work directly, there are plenty of uppers made whose cartridge/magazine will fit into the lower of a standard AR-15. They will give you a broad selection of power, range and accuracy by simply swapping barrels & bolts by pulling out two pins. It also means you don't need to resort to a compromise, single caliber rifle that may do a lot of things adequately but nothing extremely well. This versatility is one of the reasons the AR platform has achieved the popularity it has.

If you load your own, which you will have to if you want to be consistent at 1k yards. I'd look into the .338 lapua or 6.5 creedmoor.

I dont know what gun smith prices are for you in the states but i could build a custom for that money. In what ever cal you want. Im partial to the 7mms and 6.5s. A good mate shoots a 6.5/300wsm and that nails big red stags in there tracks right out to 900plus and just anihalates our himilayan thar. A 7mm Rum or saum would also fit the bill. Theres a big following of the 338 edge here aswell. Any way caliber is less of an issue as there is so many that can do it and do it well. I would build a medium contoured #3-4 on a rem700 titanium in a mc millan edge ultra light. With a decent muzzle break recoil is a non event and a sub 9lb rifle that can shoot 1000 yards is quite easy. An all rounder for me would be the 7mm saum you can load the barnes for big game and the 162 amax for everything else including long range.
