What rifles are chambered for the 7.62X39? Are any pistols chambered for this caliber?

There are some. Created for the SKS, it was the standard caliber for the AK47. It has been chambered in a few other carbines (CZ IIRC) and Thompson Contender, as well as the AK style pistols.

Didn't Ruger do a Mini-30 in 7.62x39?

you can also get AR-15 uppers in that caliber as well.

Yes, the Mini-30 is chambered for the 7.62x39.

As noted above, my favorite the AR-15 rifle. I think there is also a pistol version.
