I actually just got back from the range from shooting my sig p226 in 9mm, and I absolutely love it. Great feeling gun, fires and cycles just great. I would highly recommend at least trying one out.

I believe I can answer your question.

Price is no deterrent and you want a trophy Sig you can show off to everyone?

Answer: Buy a P210 or one of the "X" series pistols (most are based off the P226 design). They're excellent and expensive guns.

You want a classy, outstanding Sig that will out-shoot 95-99% of the shooting population for under $1000?

Answer: Figure which fit and caliber best suit you from amongst their 1911, P220, P226, P228, P229, and P239 models. They are all outstanding guns. In my limited experience, the quality is impeccable throughout that lineup.

Best Sig is kinda vague. Best in what aspect?

In any case I'm going with the P49 (P210)

I bought the P250 set with a compact and full size 40cal. They shoot great, break down easy, feel great and you get two guns for the price of one due to the interchangeable internals. Accuracy is great on both frames and everything is exactly where it is supposed to be. Magazine ejection button requires zero adjustment of the hand to press. It's purely double action without a prong on the hammer making carrying in c1 simpler. The old 229 is the tried and tested Sig that has passed the test of time but all in all, I still recommend getting the p250. I can also get x-change kits to make these guns 9mm and 357. Absolutely nothing else gives you literally more bang for your buck!

I have been impressed with my 226 SRT E2. I have 3 top ends for it .22, 9mm, and .40 S&W all work reliably and accurately.

I love my p6. $250 at my local shop. Can't find a better price for a high quality 9mm.
