If you have no need to make a carry gun of it (and you possess reasonably sized man hands), get a P210, P220, P226, or 1911.

Okay, the $2K+ P210 may be a little over the top. But if being small and compact is not an issue, the four guns listed above are arguably the best current Sigs. Apart from the P210, all are available in various finishes, designs, and price points, and they can be had for $700-800 (maybe better). Or you can go for a fancy version and spend a great deal more.

Calibers available: 9mm, 357sig, 40sw, 45acp, and even 22lr.

I'm turned off by the P250, P290, and Mosquito.
I'd love to add a P239 (or P225/P6, P245) but they're more limited capacity carry guns.
I also like the P228/P229.
The P238, P230, P232, and P938 are all probably excellent guns...but again, carry specific.

Love my p229. In my opinion can't go wrong with a classic P series sig.

I also have the P229 and carried it for over 12yrs. I finally picked up a P226 to add to my collection of Classic Sig pistols. You can not go wrong with any pistol that has the name SIG on it.

After much research and trying several different ones, I bought a P229 with the SRT trigger. I have medium sized hands and I found the P226 to be a little bit too big in my hands. The new 229 (E2) grips are a perfect for me and the gun is a great representation of the classic Sig quality and design. Love it. I have a friend with a G19 Ver 4, loved it....until she shot my Sig. Sold it and bought a P229. Yes, it is interchangeable in terms of caliber, so if you buy a 9mm, you can buy a conversion kit to .22, .40 or . 357 Sig. So it's flexible as well. A bit pricey, but worth the cost...
