Not sure if anybody mentioned the Ruger Pistol Caliber Carbines. I would love one in 9mm, but they aren't so affordable or common now.

Another gun I'd like to see remade is a Russian Nagant Revolver. Maybe in a more powerful/more common caliber like 38 special or .357.

The Colt 1877 Thunderer .41LC was a pretty gun with very weak internals and would make a gunsmith a basket case. Outlaw Wes Hardin used to carry it in his pocket and did lots of trick shooting on playing cards, which turn up for sale now and then. The Lightning version was a .38LC. Love to see it brought back but improved drastically.
