From looking at yahoo images. Some of the differences are. Front Sight, Trigger Shape, Hammer Shape, and The dove tail. I think you can get both models in the standard para finishes. Mine is a stainless one.

I think the GI has specific parts more resembling the original colt 1911 where the NON GI is a more modern 1911.

Yeah the main thing I recognized were larger flared ejection port, polymer trigger and finger guard on magazine. The overall look hasn't changed too drastically since it was produced but some enthusiasts are very particular about these new paras being called "GI" when I'm reality they're more of a hybrid and not the true "General Issue"
