I use a Uncle Mikes in the summer. Their about as thin as thin can get.
Greg Kramer of Kramer Handgun Leather makes his holsters from horsehide. Thinner, stronger, and denser than cowhide leather. You can also go to a synthetic, but I don't like them.

+1 for Milt Sparks. I'd also suggest a look at their Watch Six holster. Very comfortable and made of horsehide so it's thin, naturally stiff (no metal reinforcement needed), and very sweat resistant.
