Some of us do. Just 12 months at a time.

First I'm going to get more mags for the PA63, and maybe I'm going to get an extended slide release for the 1911. Any good suggestions for that?

Learn the proper hold. The slide release should be operated with your left thumb. If you're using this technique, you don't need an extended release and your firing hand never comes out of the firing position.
The right thumb should only operate the safety and possibly the mag release depending on who you listen to.

Or your slide stop if you have an extended release.

Your left thumb should return to that position after a magazine swap.
I read everything I could by Massad Ayoob on handling a 1911 in the 10 days following the purchase of my Kimber. After using his handling techniques for years, I accept them as doctrine. They're a little awkward feeling at first, but once mastered, they make for a rock solid platform to shoot from and a rock solid platform for the action to function in. If you're not familiar with his techniques, you should check them out.

After spending a little time on my presentations and reloads recently, I decided I'll keep the slide stop stock. It is more natural for me to use my left hand to slam it home versus my gripping hand.
Besides I don't want to pretty up my 1911 too much. People are gonna start calling it the "Kimber wannabe" if I start dressing it up...lol.

The only thing that I'd do to it if it were mine would be trigger/sear/hammer and a higher beaver tail. Few things in this world are as nice as a well set up trigger. Also, the higher beaver tail allows you to grip higher up on the frame without fear of hammer bite.
