Whether or not it's an "assault rifle" (it's not) seems to be a moot point due to her being convinced it is. I like the suggestions of the mini 14 (great firearm) and the like. But you seem intent on the AR so I won't recommend something that ends in not having an AR.
Key phrase in her denial - "an assault rifle". Now I tend to be a literal person, and my understanding is she isn't saying no to multiple (can't figure out how to bold on mobile or I totally would on "multiple") ARs in the house.
Now as for why she isn't against multiple (again, imagine I bolded that) ARs I don't know; I'm no mind reader. Could be any number of things from wanting one for each of you, to thinking things should come in pairs, etc.
In short, buy two.
P.S. I saw no budget listed.
P.P.S. In the event that buying two plus her making purchases in the same amount is out of the question due to price - simply buy both, keep the one for yourself and gift the other to her (in lieu of her making purchases in the same amount). Then you both get a nice new precious.
