Stilton Bleu for the Vivid Trippy dreams it gives you when you eat it before going to bed....

Pretty much I like most cheeses, paired properly with wine , beer etc.

Colby cheese,can't believe it wasn't listed ,never even heard of most of them listed .

Sharp Cheddar, by its self. With a GOOD beer with it. Boulevard wheat is one that I've been enjoying lately.
