depends on what i am putting or using the cheese for.

personally i don't like to eat cheese by itself.

Mimolette for me.

It's kind of a French Gouda but dark orange and a little tangy.
It comes in a ball about the size of a small cantelope. Looks like one too.
The rind gets its look from cheese mites during aging.
I highly recommend trying it if you can find it at a cheese mongers.

I like Swiss on pretty much anything. Grilled cheese, cheese and crackers, in a sandwich, etc.

But like Axxe said, it depends on what I'm using it for. Different cheese for different uses. Fresh grated parmesan on a salad or pasta, a variety of italian cheese on pizza, etc.
