Just butter and salt. Mash it all up with a fork then I eat it, skin and all.

I usually eat mine plain, but if I do put a topping on it a little butter goes a long way .

Salt, pepper, and lots of butter on the inside of the potato, then sour cream, salt, and pepper on the skin.
