Id go with Tombstone, For a Few Dollars More, Unforgiven, Butch Cassidy and the Sundance Kid, and not sure if this falls under westerns but my favorite would be Jeremiah Johnson (say pilgrim, you know how to skin a girzz) best scene ever!!!!

He played "Lame Beaver" in "Centennial". My favorite mini-series.
