Alder is very mild, it is great for smoking fish. Alder-smoked is the only way I will eat salmon, otherwise I can't stand the taste.
Are you coming to Bob's shoot 'n hoot in Oct? I couldn't make Apr but Oct is on.

Default Smoking and Grilling!

Doing turkey/Ground Round mixed burgers and Grilled veggies on the stovetop. To windy out to grill out side ( I know: if I had a gas Grill I could use the grill outside

Mine is charcoal grill, just drizzle a little vegetable oil on to the coals when it's wet or windy to get a little flame going.

I did some home made spiedies today. WTF is a spiedie you ask? It is basically a marinated shish ka bob. They are from Binghamton NY. Big Greek population there so the speidies are marinated in a dressing that is basically a Greek version of Italian dressing. I also grilled some peppers, mushrooms and zucchini. My daughter made some apple crisp for desert. A good meal for my wife.

Speidie marinade is also the best way to cook venison IMO. Marinate for a few days and grill medium rare. It's a thing of beauty.

Couple rib racks, dry rubbed. Indirect heated and apple wood smoked for 30 min. Then foil wrapped with some apple juice and back on the grill over direct heat to juice steam for another 30 min. Then basted in Sweet Baby Ray's and back on the grill for 15 min.

Nice, tender and flavorful.
