grilling and smoking are something i try and do year round.

wood smoke imparts a different flavor profile to food that you can't get cooking inside.

just as wood smoke gives the meat a different flavor profile, different types of wood will as well.

I use both charcoal and different flavored wood chips in mine,..and I keep the heat low unless I'm cooking something with a bone in it.

That's why I love my Green Mountain pellet grill. Smoke and grill with the many different blends of wood pellets.

Okay. Today I bought a smoke box for my grill and some hickory and cherry wood chips. There was also mesquite, apple and alder. I have never heard of alder smoke chips before. What kind of flavour do they impart and what foods would you smoke with alder chips?

Never used Alder either. Apple wood is one of my favorites.

i have heard of alder, but have never used it, so i can't offer any input on what type of smoke flavoring it might impart, whether strong or mild.

hickory can be pretty strong smoke flavoring. i like mesquite or pecan wood the best myself. both add great flavor without being overpowering the meat. mesquite also works great for grilling because it burns very hot and builds a great bed of coals.

if you try out the alder wood, let me know what you think of it.
