I make sure the steaks are at room temperature all the way through before tossing them on the grill. Works for me.

A few years ago a group of us very nearly got forcibly thrown out of a restaurant (Jocko's in Lompoc, CA) because one of the idiots I was there with asked for steak sauce when they brought the steaks to our table. The waitress yelled at him "STEAK SAUCE?!?!

Then she stood there waiting with her hands on her hips and the entire restaurant watching.
