Why would anyone want to eat whales? Aren't they mostly bluber (i.e. fat)?

Not really. They're very large, and naturally insulated against extreme colds, which why they became famous for their fat. They were hunted, and some species to extinction, for their fat that was rendered into oils used in heating, lighting, cooking, and some industrial purposes. But, there is a comparable amount of lean muscle mass on them too.

If they taste anything like Dolphin, I want nothing to do with it.

wow trip. You have actually had dolphin? Now you have me curious. What does it taste like?

Generally I don't care about hunting, but I do think when an animal becomes endangered because of it, then we need to do something to prevent further progression.

You've obviously missed Whale Wars on Animal Planet (but you might not have that channel - check the Web). Interesting show with Paul Watson (formerly with Sierra Club and Greenpeace) and a bunch of volunteers mostly harassing the Japanese whaling fleet who are slaughtering whales for scientific purposes, but taking probably 99% of it back and selling it. No other reason for have a floating processing ship there. Too big for scientific research.
