Package of refrigerated chicken breast meat (cooked)
Sauté onions and sweet peppers (diced) add chicken. Soy sauce, and a bit of chili powder. When cooked, add a drained can of kidney beans, drained can of Niblets sweet corn. Cook 10 minutes, medium heat.
Serve over cheddar/broccoli rice, top with shredded cheese. low fat, low cholesterol, high protein, high fiber and tastes DAMNED good!
I made fried rice, with chicken, onions, bell peppers, mushrooms and balsamic vinegar... Like I said, delightful.
