I haven't had it since I was a kid but we dug the roots in the winter.

Wasn't the original home made root beer made from sassafras root?

Believe it was and you can make your own:

Bet it's a lot better than the stuff you buy.

Yeah, and store bought root beer too (that's why it's called root beer ). But IIRC, someone decided that sassafras could cause cancer, so they don't use in anymore. Of course, EVERYTHING causes cancer, so what the hell?

Anything you can do on the stove can be done in a pit and will taste better. Especially when it isn't store bought meat.

We used to have all our butcher calves pre-processed on the farm. Back in those days they would send a truck out to your farm, drop the calves right there in the corral, gut them and hang them in the back of their refrigerated truck. The cattle didn't get all shook up by hauling them to the local meat locker and having to go through that process. It was the best beef I've ever ate plus we had absolute control over their feed rations so we knew beyond doubt what we were getting.

I wish we had someone like that around here. The refrigerated truck would be wonderful. good to get the heat off the meat quicker. I like to just wait until it freezes out to start processing mine. But also like fresh meat, so we will butcher some during the spring so ya don't get that taste from having them frozen too long.
