Some will eat this some won't. I know I love all the food you stated. But, I always have that little alarm in my head that says,"Ok, you ate enough of that rabbit food, BRING ON DEM CRAWFISH!" Then you eat 'em until you bust, then eat some more!

And mushrooms and pearl onions. We eat until we're full, then stand up and eat some more. Makes more room that way.

The only thing I don't like about a crawfish boil is the next day. Esp. with my cousins. I don't drink but they make it up for me.
Hanging out with them the next day, beer, crawfish, all them mushrooms and other veggies....and they get you when you're in the middle seat of the truck and won't roll the windows down!

Had a big boil at my parents house Friday. It was great. We're gonna use what was left to make a macque choux. My wife makes the best. 2 plates everytime.

I'm sorry to say but the GF crawfish boil didn't happen........yet. The man (farmer) that provides the crawfish only had 350 lbs of the 600 that was needed. The other local cajun members here will understand why the crawfish were in such short supply. We had a cold snap a week or so ago and when that happens the crawfish go deep into the ground and won't come up until it warms up. But, in a few weeks the crawfish boil will happen and I will take pictures then.
Easter is the highlight of the crawfish season for the farmers. EVERYBODY (Catholics) wants to do a crawfish boil on Easter Sunday.
Anyway, Happy Easter to everyone and keep watching for the pics, soon.

Here in Avoyelles parish the price is $1.50-$1.75 a lb. Amazing how that price drops about a $1 or more per lb. right after Easter.
