Get one of those cast iron "presses" you can find in some stores that specialize in cast iron cookware. I have a nice set of cast iron pots and pans (left by my ex when she moved out) and already had one of those presses. No "rawish" ends and the bacon cooks evenly. As for the bacon grease, how else can you cook your eggs?

Bacon should be slow cooked on medium heat in a frying pan, in it's own grease (preferably submerged in it's own rendered fat).
Too often bacon is burned beyond recognition. The idea is to drive some of the fat and moisture out and lightly brown (caramelize the sugars) the bacon strips.

Wrapped around a chicken thigh and camembert cheese, then in the oven at 180*C for 40 mins

I always cook my eggs in butter. I've never tried cooking them in the bacon grease. 
I usually pour the bacon grease over the dogs food when it cools. They love it.
