When we would go deep sea fishing we would catch them in about 200' of water.
I make a Sauce Piquante that takes about an hour to cook @ a simmer. I then pour it over the fish in a baking pan and bake it @ 350 for 20-30 minutes. C'est si bon! Dinner, what's up? - The Club House

I fillet them.

I line the bottom of a large baking dish with slices of orange, cover the oranges with fillets, sprinkle salt, black pepper. cayenne pepper and granulated garlic over them. top with thin slices of sweet onion. Then put on a second layer of same. Add a couple of cans of diced tomatoes.

Bake at 325-350 til done.

Serve over steamed rice.

(Uh.. 17, and her name was Colleen)

It's all red snapper. They call all cod Red Snapper. It technically doesn't even exist on the west coast. It's called Vermillion.

Dinner was a disappointment (wife made plain fried cube steak and a bowl of spinach leaves) so I am making some chocolate chip cookies. The other day I tried a recipe that was a little "cakey" and not quite right, so tonight I am making the same recipe but substituting honey for the white sugar (still using brown sugar though.) First sample should be in about 10 minutes.
