I used to drink bourbon. Went to a scotch tasting at my regular pub. Now I only drink scotch for strong liquor. But beer is still my general alcoholic beverage.

On the road in a hotel. I think I am going to wear the expense account out at PF Chang's tonight. Some spicy chicken sounds about right along with a few glasses of wine.

Went to good ole fashion FISH CAMP tonight. Fried shrimp, scallops & clams , M-M-M good & feel my arteries hardening as I type this .....LOL

Garlic Chicken

About a head of garlic, crushed into about half a cup of olive oil, heated to infuse the garlic into the oil.

4-6 Boneless, skinless chicken breasts
about 1/2 to 3/4 cups of bread crumbs. whichever you have or Italian if you have to buy them.
Tablespoon or to taste of salt in the breadcrumbs
Pepper to taste in the breadcrumbs
Italian seasoning, about a tablespoon in the breadcurumbs
1/4 cup of Parmesan cheese in the breadcrumbs

OVen preheated to 425 deg F

Dredge the chicken in the oil and garlic, and then the bread crumbs. Place on a raised baking dish to let the fluids collect below the chicken.

Place in the oven for 30-35 min until the internal temp is 170 deg F or the juices run clean.

I had Chardonnay with it.

I made enough to take some to work for lunch, but sadly cannot take the rest of the Chardonnay with it.

Sounds delicious. Wonder how it would be without the bread...

I'm having pulled pork with home made bbq sauce and some green beans and onions.
