What's better than a burger, potato salad, baked beans and apple pie for the 4th.

Stouffers frozen stuffed peppers.

A little disappointed. The diner where I usually eat on Fri. and Sat. evenings was closed yesterday. They told me they'd be open. I can understand them closing on the holiday, but I drove there after work again today, and they decided to take both days off.
Hence, microwave crud for dinner after work.

Ribs with a great rub on them.


Ribs with BBQ sauce, corn on the cob, and in the aluminum foil is an onion cored in the middle with lots of butter and garlic powder. Almost done!!!


Dinner with potato salad and a fresh mater. Yummy.


If anybody tops this I want pics or it didn't happen. LOL

Default Dinner, what's up?

Can't top that, but we had a decent 4th. 8 Burgers(4 sirloin and 4 Turkey), Nathan's Coney Island All beef Long Hot Dogs,..and a Beef Sausage. Sides were baby corns, Mac Salad(home made) and some Soviet Cole Slaw(Also home made by Moi),..a jumbo seedless Watermelon for desert,..and today, more of the same......Sat. At our Temple after the service someone was gracious enough to supply home made Baked fried chicken, fruit Salad, someone's idea of store bought Mac Salad , mrs. fields Soft cookies( many!) and my friend did a great Broccoli pesto..with our Rabbi and his family visiting his wife's parents in Denver, our Cantor "Larry" ( Early Nam Vet, also an Aviator) took over with assistance from Rabbi "Dave" from the Prescott Congregation , We had some folks also come up from The congregation in Mesa, in a small bus( about 16). Wound up to be a good day. Looked in my Mail box from Thursday and there was my package of Scope Coats..

My wife asked me about some stuffed pepper recipe I smoke abut 15 years ago last week. Luckily I actually remembered what she was talking about. So on the 4th I made some 'moque chaux', forgiven me if I butchered that Cajuns, and stuffed 4 large bell peppers with it. Then put them on the green egg for about 45 mins or so. Wow, that was good. Can't believe I waited that many years to do it again.

Moque chaux is a cajun corn recipe. Basically fresh corn cut off the cob, onion, garlic, tomato(optional) and some cajun spices all sautéed together. I added a poblano pepper and scallion to mine. Then cut the top off a bell pepper and remove seeds. Fill it up, put the moque chaux inside and smoke or grill until the pepper is soft and maybe a little brown in a few spots.

Don't worry carnivores. I also added some ground taco meet, cheese and habanero salsa to a few other peppers.

Let's see... Today is a pork gravy for my guys, rice, fresh tomatoes, mixed veggies, and baked chicken for me. Sweet tea to wash it all down
