Chili: meat sliced across the grain, sautéed with diced yellow onions until the onions start to carmelize.

Blended ground chilies: New Mexican, Anaheim, Ancho, Cayenne, (the blend varies depending on how hot you want), granulated garlic, cumin, and Mexican oregano. Couple of beers.

Serve over pintos or refries. With hot corn tortillas to dip in it.


Dignity, Honor, and Respect: At least until they do something so dishonorable, or disrespectful that your left so indignant you have to rip their head off.

Being St. Patty's Day,, I'll take the wife out so she can have corned beef and cabbage,,, I personally dislike cabbage even though my paternal grandmother was Irish and Cherokee,,, I'll have a steak or prime rib,,,
