Ok what kind of meat does everyone put in their chili? I have used cubed beef and ground beef. I kinda like the cubed better but the wife likes the ground meat better so thats what I usually use. Beans or no? Cumin? (of course)

I don't like the chunky meat. I use ground beef. Black beans.....though in the last batch I used black beans and cannolini beans. I don't use Cumin but I do use "Chili Powder" which I'm sure has cumin in it. And I usually put in a bottle of beer but I forgot this time and I'm mad I forgot.

Tonight I'm going to brown some ground beef and mix in an envelope of taco seasoning, grate some chedder and pepperjack cheese, chop up some tomatoes (or what they pass off as tomatoes this time of year), lettice and onion. Break out a jar of my homemade salsa and a container of sour cream. Warm up some flour tortillas and its roll your own Burrito night.

On another note, my 264 LBC barrel that I ordered on Dec. 3rd is on the truck for delivery today. I can't wait to finish the rifle.

Oh, oh.
My 2 cents. Usually ground meat. A combination of beef and pork. Or straight venison, if that's what I have.
Cumin-yes.
Beans-Never! Once you add a bean, it's just bean soup with meat thrown in.

personally i use an assortment of meats in my chili. i like ground venison if i can get it, instead of ground beef. but if not, i use cubed beef stew meat, lean ground beef, and pork sausage for the fat and flavor. i season my meat with cumin when cooking it. i also saute half or my onions and bell peppers and the other half goes into the big pot with the rest of the goodies.

if i do make a batch with beans, i use four different types of beans. ranch style with jalopenos, chili beans, black beans and red kidney beans. most everyone that eats my chili likes the version with beans better and i make it more often than the beanless version. most chili cookoffs you have to make it without the beans.

i use a lot of hot peppers in my chili. jalopenos, poblanos and cerranos. i learned a little trick years ago from an older guy i worked with. a person can stand hotter and spicier food if it has good flavor. so i have learned a few secrets over the years to bring hot and spicy new flavor!

I don't like heat just for heats sake, either. You have to have flavor.
With chili, I usually use at least 4 kinds of peppers. Sometimes more. Some for heat, some for flavor.
There are always poblanos in there for that smokey taste.
