I didn't use the cheese sticks either time, I used real mozzarella cut into pieces. I used a combo of mozzarella, fresh parm., and ricotta.
It came out great. I had one right out of the oven and packed the rest for lunches or dinners.
I'm not much for spinach but I'll be trying other things in there as well. I like pineapple on my pizzas but I'm not sure if it will work in these. It might add too much moisture.

I made the chicken teriyaki for dinner. I was too lazy to stir fry the rice, so I fixed like a pilaf.
I shredded some cabbage, cut up some big green onions and celery, put it all in a large saucepan with the raw rice, chicken stock, and the marinade, then set the chicken bossoms on top, covered and baked it for an hour and ten minutes.
It came out pretty good. The chicken was cooked through but moist.
