Great dinner tonight. I made crab cakes with lump backfin. Used Ritz crackers as the coating, had crab, a raw egg, some sauteed onion, pepper, and Parsley as the only thing inside the cracker coating with the crab meat. Made three cakes out of a pound of lump crab meat.
Also took some fresh green beans, blanched them, and finished them in olive oil with garlic slices in the oil.
A little cornbread, and a glass of a decent Chardonney, and life is good!
A bad day at the range is better then a good day on the job!
